Directions
- Wash and dry the red pepper.
- Cut the pepper into 1/2" rings. Remove the white inner flesh and seeds.
- Season the vegetable oil with salt, black pepper and stock cube.
- Season the sliced peppers.
- Heat the seasoned oil.
- Place the pepper rings in the middle of the pan and let them saute for a minute.
- Add one egg each to the middle of the bell pepper rings.
- Continue to cook over medium/low heat until the yolk is firm and egg white is hard. Flip them over carefully and cook on both sides.
- Serve with toast and enjoy!!!
