Nigeria stew can be served with rice, yam, fried plantains and what not. You can use it to prepare jollof rice. If your Nigerian stew is always tasteless or waterey don't worry I got you just follow my directions. You can use the oil from the fried meat it'll add flavor to the stew.
You need:
15 large tomatoes
8 large red peppers
7 scotch bonnets
1 big clove of garlic
2 large onions
2 tablespoons curry powder
31/2 tablespoons seasoning powder
Salt to taste
1 medium bowl assorted meat
2 cooking spoons tomato paste
2-3 cups vegetable oil
Tomatoes, onions, red peppers, garlic and scotch bonnets. |

Boil the blended pepper for about 10 minutes. If you used too much water don't worry I got you, just let it boil longer to thicken it. |
Add the vegetable oil, tomato paste and season to taste. Let it boil for about 10 minutes. {If you fried the meat you can use the vegetable oil it'll add flavor to the stew}. |
