To make your fish juicy or moist add vegetable oil or stock to the marinade.

You need: 2 cloves garlic, 1 medium red pepper, 1 large onion, 1 scotch bonnet, 1 teaspoons curry, 2 tablespoons adobo season, 4 tablespoons onion powder, 2 tablespoon vegetable oil, 1 teaspoon cayenne pepper and 3 tablespoons red pepper flakes. |

Roughly blend the onion, garlic, red pepper and scotch bonnet. Add the seasoning, vegetable and mix well, Set aside. |

Rinse the fish very well. Make slant cuts in the fish. Rub the marinade on/in the fish. |

Marinate for 50 minute or more. |

Place the fish in a foil paper. Add the sliced onion. Pre heat the oven to 400F. |

Wrap the fish in the aluminum foil. Place it on the oven rack and bake for 20 minutes. |
