Nigerian pancake is spicy and sweet. I added onions to make this pancake savory. You could use sliced scotch bonnet instead of ground cayenne pepper.
YOU NEED:
2 cups all purpose flour
1 tablespoon sugar
1 teaspoon salt
tangerine zest
11/2 teaspoon ground cayenne pepper
2 pinches nutmeg
2 tablespoons butter
2 eggs
11/2 cups milk
Soup scoop spoon
Skillet pan
Slotted spatula
Mini whisk
Sieve
Sift the flour. Mix all the dry ingredients (flour, sugar, salt, tangerine zest, cayenne pepper and nutmeg). |
Melt the butter. Mix the wet ingredients (melted butter, milk and egg). |
Gradually pour the wet ingredient into dry ingredients and mix until smooth. |
Leave it in the refrigerator for 30 minutes.{Use a soup scoop spoon to pour the batter into the pan}. |
Grease the pan with oil or butter. Heat it up and pour the batter into the pan swirl to spread evenly {start pouring it from the middle}. |
Cook for 1 minute and flip over for 30 seconds. {flip the pancakes with a slotted spatula). |
Repeat this method until you use up the batter. |
Serve with turkey bacon and pancake syrup. Enjoy! |
