Recipe of the day: Egusi and vegetable soup

I'm still looking for the right word to describe how much I love this soup. You can eat it with rice, starchy solids and so on.

Directions
  • Slice the onion and red pepper.
  • Wash, boil and season the chicken, beef tripe and oxtail.
  • Mix the egusi powder and blended onion/egg to make a paste.
  • Fry the egusi paste, red pepper and onion in bleached palm oil. 
  • In a medium pot, fry the blended pepper, add the chicken stock, stock cube, salt. After 5 minutes add the fried egusi paste (with red pepper and onion) and cook on medium heat.
  • Add the assorted meat and let it absorb the soup.
  • After a while, stir and add the chopped spinach. Cook thoroughly. 
  • Serve with rice, pounded yam, semovita or eba.
