Recipe of the day: Red velvet cake and Cream cheese frosting

Red velvet cake is one of my favorite' so today, I'll show you how to make red velvet cake and cream cheese frosting from scratch.  





   Ingredients

Pre heat oven to 350 degrees F. 




In a bowl, sift the flour, sugar, baking soda, salt and cocoa powder. In another bowl, whisk together the eggs, milk, butter, oil, food coloring, vanilla extract and lemon juice. 



Mix the dry ingredients into the wet ingredients until a smooth batter is formed. 



Divide the cake batter evenly among the baking pans/baking cup. Place the pan/baking cups in the oven. Rotate halfway through the cooking until a toothpick inserted in the center of the cake comes out clean. For about 30 minutes.



Leave to cool. Frost the cake and garnish with pecans (optional).







   Cream cheese frosting
  • Mix the butter and cream cheese together for about three minutes on low heat until very smooth. 
  • Add the vanilla extract and slowly add the powdered sugar until smooth and creamy.
  • Decorate your cake or cupcakes.





  • Adding a teaspoon of Chinese Five Spice is always great for exotic chocolate cakes.
  • Adding freshly ground ginger helps spice up a carrot cake.
  • Freshly ground chai spice or even the contents of a bag of earl grey tea are heady and aromatic.
  • The scrapings from a vanilla bean can be very sweet and heavenly for red velvet or dark chocolate cakes.
  • Freshly grated or dried, flaked coconut mixed in makes it perfect for a coconut cake.
