Red velvet cake is one of my favorite' so today, I'll show you how to make red velvet cake and cream cheese frosting from scratch.
Ingredients
- 2 cups vegetable oil
- 3 cups all-purpose flour
- 2 cups sugar
- 1 teaspoon baking soda
- 2 cups butter
- 2 large eggs
- 1 teaspoon cocoa powder
- 2 tablespoons red food coloring
- 1 Ib cream cheese
- 1 teaspoon fine salt
- 1 cup milk
- 2 teaspoons vanilla extract (non-alcoholic)
- 1 teaspoon lemon juice
- Chopped pecans for garnish
- 4 cups powdered sugar
Tools/Equipment
Pre heat oven to 350 degrees F. |
In a bowl, sift the flour, sugar, baking soda, salt and cocoa powder. In another bowl, whisk together the eggs, milk, butter, oil, food coloring, vanilla extract and lemon juice. |
Mix the dry ingredients into the wet ingredients until a smooth batter is formed. |
Leave to cool. Frost the cake and garnish with pecans (optional). |
Cream cheese frosting
- Mix the butter and cream cheese together for about three minutes on low heat until very smooth.
- Add the vanilla extract and slowly add the powdered sugar until smooth and creamy.
- Decorate your cake or cupcakes.
- Adding a teaspoon of Chinese Five Spice is always great for exotic chocolate cakes.
- Adding freshly ground ginger helps spice up a carrot cake.
- Freshly ground chai spice or even the contents of a bag of earl grey tea are heady and aromatic.
- The scrapings from a vanilla bean can be very sweet and heavenly for red velvet or dark chocolate cakes.
- Freshly grated or dried, flaked coconut mixed in makes it perfect for a coconut cake.
