Recipe of the day: Nigerian bean soup (Gbegiri) with semovita

The first person I made this soup for was my dad. He was happy and he loved it. It was a special day indeed ^_^. This soup is one of my favorite' it's a yoruba soup (Western Nigeria) made from brown beans.
It can be eaten with semovita, eba, yam flour, molokhia soup and Nigerian stew. There are different ways to prepare this soup but i'll show you how I prepare mine. It's so easy and straightforward. If you stay in Nigeria you can get molokhia leaves from your local market. 

Bean soup: Gbegiri
Molokhia soup: Ewedu
Yam flour: Amala






    Ingredients





   Directions
      Bean soup (Gbegiri)
  • Soak the beans and peel the coat 
  • Put it in a medium pot add water and palm oil
  • Cook till they become so soft
  • Leave to cool and blend
  • Then sieve to remove solid particles
  • Transfer to a pot and season with (stock cube, garlic powder, onion powder, chili powder and salt) 
  • Add the blended onion and scotch bonnet
  • Bring to a boil.


        




      Molokhia (Ewedu)
  • Thaw the frozen

    olokhia
  • Blend and pour into a pot
  • Season with stock cube and salt
  • Bring to a boil.

   



        

      Chicken stew
  • Blend the red pepper, tomato, onion, scotch bonnet and tomato paste
  • In a medium pot, heat the vegetable oil 
  • Pour the blended pepper and boil
  • Season with stock cube, garlic powder, onion powder, and salt 
  • Add the fried/baked chicken and cook.

     



      Semovita
  • In a medium pot, bring water to a boil
  • Mix semovita and water to make a paste 
  • Pour the mixture and stir constantly with a wooden spatula 
  • When it is thick add hot water and simmer for about 2 minutes
  • Then stir until smooth and lump-free








   My kitchen tip(s)
  • If the bean soup is too thick, add water and simmer 
  • To take the lumps away from the semovita, add more flour to it and stir constantly (you could do this if it's too soft)
  • You could buy the minced molokhia instead of blending
