Recipe of the day: Efo riro (vegetable soup)

Efo riro is a rich vegetable soup originated from the Western part of Nigeria, Yoruba land. You can prepare it by using only spinach but in Nigeria, we use different types of vegetables.
If you want to mix the vegetables try efo Shoko (Lagos spinach), efo Tete (Kallaloo) or efo Igbo (African egg plant leaf). 
Before you use these vegetables make sure you wash them thoroughly with hot water to kill bacteria. 


These are the types of vegetables you can find in your local market:
  1. Efo Shoko aka Lagos spinach
  2. Efo Tete aka Kallaloo
  3. Efo Igbo aka African eggplant leaf
  4. Efo Ewuro aka Bitter leaf
  5. Ugu: Fluted pumpkin leaf
  6. Efo Yanrin aka Wild lettuce 
  7. Efinrin aka Scent leaf 
  8. Ebolo aka Bologi


    
Leafy green vegetables have more nutrition per calorie than any other food. Greens make up a significant source vitamins A, C, E and K as well as several B vitamins. They are rich sources of minerals such as calcium, magnesium, iron and potassium. They are rich in fiber, extremely low in fat and carbohydrates and provide an excellent source of protein.

    Directions
  • Soak the dried fish or smoked fish for about one hour.
  • Cut the vegetable(s). Rinse thoroughly with hot water.
  • Blend the onion, red pepper, scotch bonnets, tomato and tomato paste.
  • In a medium pot, bleach the palm oil.
  • Add the sliced onion and red pepper.
  • When the onions are golden brown, pour the blended pepper and simmer. 
  • Add the chili powder, garlic powder, onion powder, stock cubes, and salt to taste.
  • Add the assorted meat and cook on high heat. 
  • Then add the vegetable(s) and simmer. Don't over cook the vegetable(s). 
  • Serve with eba, pounded yam or rice.
