Efo riro is a rich vegetable soup originated from the Western part of Nigeria, Yoruba land. You can prepare it by using only spinach but in Nigeria, we use different types of vegetables.
If you want to mix the vegetables try efo Shoko (Lagos spinach), efo Tete (Kallaloo) or efo Igbo (African egg plant leaf).
Before you use these vegetables make sure you wash them thoroughly with hot water to kill bacteria.
These are the types of vegetables you can find in your local market:
- Efo Shoko aka Lagos spinach
- Efo Tete aka Kallaloo
- Efo Igbo aka African eggplant leaf
- Efo Ewuro aka Bitter leaf
- Ugu: Fluted pumpkin leaf
- Efo Yanrin aka Wild lettuce
- Efinrin aka Scent leaf
- Ebolo aka Bologi
