cook: 30minsLet me start by saying happy independence day to all my fellow Nigerians. Today I'll be showing you how to make gizdodo, it's the combination of fried gizzards and plantain. Use ripe plantains, to taste better.
Ingredients
- 1 ripe plantain
- 500g chicken gizzards
- 1 scotch bonnet
- 1 teaspoon chili powder
- 4 medium roma tomatoes
- 1 large onion
- 1 medium red pepper
- Salt to taste
- 11/2 teaspoon garlic powder
- 2 cooking spoons palm oil
- 11/2 cup vegetable oil
- 2 stock cubes
- 1 teaspoon curry powder
- 1 teaspoon dried thyme
Tools/Equipment
Wash the gizzards throughly. |
Boil and season to taste. |
Slice/dice the red pepper, onion and plantain. Roughly blend the red pepper, onion and tomato. |
Fry the gizzards and plantain. |
Heat up 1/2 cooking spoon of vegetable oil. Fry the chili powder, stock cube, garlic powder, curry, thyme and salt to bring out the flavor. |
Stir-fry the sliced/diced onion and red pepper. |
Add the blended pepper and palm oil. Cook for about 5 minutes. |
Add the fried plantain and gizzards. Simmer for 2 minutes. |
Serve with rice or eat it alone. |
