Recipe of the day: Coconut Jollof Rice, BBQ Chicken Thighs and Moin-Moin

Jollof rice is a popular dish in many parts of West Africa. In Nigeria, we all know Sunday rice (special rice). It always taste' better.

Anticipating during the week. I am adding coconut
milk to the basic ingredients which are rice, tomatoes, onion, salt, red pepper, and tomato paste to give it a different flavor. I am going to show you how I make moin-moin (Steamed bean pudding) people always like it and I end up teaching them how to make it ^_^. I'm using the bean flour and it tastes different from the soaked beans. It's a Yoruba dish (Southwest region of Nigeria). It can be baked or steamed and it can be eaten with rice, bread, plantain or alone.

   Directions
      (Coconut jollof rice) 
  • Blend the onion, red pepper, tomatoes, cayenne pepper, green pepper and tomato paste.
  • Add oil to the pot, when the oil is hot (the surface glistens and
    shimmers).
  • Pour the blended pepper.
  • Add the seasonings (bouillon cube, thyme, curry, black pepper, onion powder, garlic powder, salt) and stir.
  • Simmer for three minutes.
  • Pour the coconut milk and water, wait for it to boil. 
  • Add the parboiled rice.  
  • Make sure the water level is on the same level with the rice.
  • Cover the pot and leave it to cook on medium heat.  

      (Moin-moin)
  • Boil the eggs. 
  • Soak the bean flour in warm water for one hour.
  • After one hour, pour the blended pepper, add the seasonings
    (bouillon cube, onion powder, garlic powder, salt), sardine, vegetable oil and mix well.
  • Scoop the mixture into the plastic bowls and add one boiled egg into the bowls.
  • Steam for about 40 minutes. 

       (BBQ Chicken)
  • Preheat oven to 350 degrees F (175 degrees C). 
  • Thaw the chicken and wash with lemon juice.
  • Boil the chicken and season with (bouillon cube, thyme, curry,
    black pepper, onion powder, garlic powder, salt) and onion.
  • After mix the BBQ sauce, thyme, ketchup, honey and vegetable oil together.
  • Transfer the boiled chicken to a baking glass and cover each piece well with the reserved sauce and bake for 40 minutes basting with sauce every 15 minutes.  






    My kitchen tip(s)

  • Before you add water/coconut milk to the tomato sauce, make sure you fry it very well.  
  • Make sure the water level is on the same level with the rice.
  • When the oil is hot, the surface glistens and shimmers.
  • Wash the chicken with salt/lemon juice.
  • Baste the chicken with sauce every 15 minutes.
