Recipe of the day: Otong soup with Pounded Yam

I wanted to have something mixed with okra. When I opened the fridge I saw that I had spinach so I prepared Otong soup. It is the combination of okra and vegetable. This Nigeria soup is from Calabar (the South East region of Nigeria). It can be eaten with eba, pounded yam, semovita,  fufu or tuo. I really enjoyed this soup!

    Directions
  • Boil and season the goat meat,
    beef tripe, chicken, and beef
  • When it's almost soft, add the smoked chicken.
  • In a medium pot, add the stock, crayfish powder and bring to boil. Taste for salt.
  • Add boiled meat, blended (onion, okra and scotch bonnet) and palm oil.
  • Simmer for three minutes.
  • Then add the chopped spinach.
  • Cook for 7-10 minutes.





    My kitchen tip(s)
  • When you're bleaching the palm oil, be extra careful and make sure the kitchen is well-ventilated. Your smoke alarm might go off.
