Ingredients
- 4 cups rice
- 4 eggs
- 2 large onions
- 1 large red pepper
- 4 big tomatoes
- 1medium can tomato paste
- 1 cup vegetable oil
- 3 scotch bonnets
- 2 teaspoons chili powder
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 2 teaspoons oregano leaves
- 2 teaspoons curry powder
- 2 cups chicken stock
- 1 stock cube
- salt to taste
- beef franks
- 1 medium can mixed vegetables

Directions
(Jollof rice)
- Blend the onion, red pepper, tomatoes, and scotch bonnet.
- In a medium pot, stir-fry the sliced onion and red pepper.
- Pour the blended pepper & tomato paste. Cover and fry.
- Season to taste. Stir and simmer for three minutes.
- Pour the chicken stock and water, wait for it to boil.
- Add the parboiled rice.
- Make sure the water level is on the same level with the rice.
- Cover the pot and leave it to cook on medium heat.
- Stir-fry and season the mixed vegetables, onion and beef frank. Mix it with the jollof rice.
(Poached egg)
- Crack the egg into a custard cup
- In a frying pan, bring water a boil
- Place the cup near the surface and gently drop the egg into the water
- Turn off the heat and cover.
- Let it sit for 4 minutes until the egg whites are cooked.
- Season with salt and pepper
- Serve with jollof rice
