Recipe of the day: Mixed jollof rice with poached egg

   Directions
(Jollof rice)

  • Blend the onion, red pepper, tomatoes, and scotch bonnet.
  • In a medium pot, stir-fry the sliced onion and red pepper. 
  • Pour the blended pepper & tomato paste. Cover and fry.
  • Season to taste. Stir and simmer for three minutes.
  • Pour the chicken stock and water, wait for it to boil.
  • Add the parboiled rice. 
  • Make sure the water level is on the same level with the rice.
  • Cover the pot and leave it to cook on medium heat.
  • Stir-fry and season the mixed vegetables, onion and beef frank. Mix it with the jollof rice.


(Poached egg)
  • Crack the egg into a custard cup
  • In a frying pan, bring water a boil 
  • Place the cup near the surface and gently drop the egg into the water
  • Turn off the heat and cover. 
  • Let it sit for 4 minutes until the egg whites are cooked.
  • Season with salt and pepper
  • Serve with jollof rice
