You can enjoy this delicious egg with yam, potato, bread, plantain, almost anything. Eggs are versatile and you can eat it anytime. I'm using the Nigerian method and I hope you enjoy it.
You can use corned beef, sardine, tuna or chicken but I used grilled chicken. I bought the grilled chicken {Tyson Grilled & Ready Chicken Breast Strips} at walmart so I just had to microwave it for about four minutes before adding it to the onions, tomatoes and red pepper.
Ingredients
- 4 large eggs
- 4 tablespoons vegetable oil
- 1 medium onion
- 1 large tomato
- 1 small red pepper
- 1 stock cube
- Salt to taste
- 1/4 teaspoon black pepper
- 8 strips grilled chicken
Tools/Equipment
Directions
- Crack the eggs and season to taste
- Beat the eggs
- Heat up the vegetable oil and stir-fry the sliced onions, tomatoes and red pepper for about 5 minutes
- Add the grilled chicken
- Slowly pour the egg and leave for about 2 minutes
- Let the egg form lumps
- Keep stirring until the eggs are cooked
